Which Wine Pairs with Asparagus?
Asparagus is one of the highlights of spring cuisine – and from mid-April to June it is finally asparagus season again. Whether served traditionally with sauce hollandaise, as a creamy asparagus risotto, or as an aromatic side dish, there is a perfect wine for every asparagus dish. However, the question of the ideal white wine for asparagus cannot be answered with a single rule. Here is a small but useful guide to successful asparagus and wine pairings.
Asparagus has a delicate, slightly nutty and sometimes subtly bitter flavour. When boiled or steamed, it develops its full aroma. The accompanying wine should therefore support this fine character rather than overpower it.
Which Wine Works with Which Asparagus Dish?
If asparagus is prepared in a simple, classic style, we recommend a lighter white wine with gentle acidity, such as Pinot Blanc (Weissburgunder) or Pinot Gris (Grauburgunder). Both varieties are elegant and restrained, pairing beautifully with the delicate flavour of asparagus.
When richer or buttery elements come into play – such as asparagus with sauce hollandaise or asparagus risotto – the wine can show a little more power. A lightly oaked Chardonnay or a Mosel Riesling works particularly well. These wines offer enough structure and body to complement the intensity of the sauce without dominating the dish.
When Asparagus Is a Side Dish
If asparagus is not the main component on the plate, it is best to choose the wine according to the most flavourful element of the dish. When paired with fish or shellfish, we recommend a slightly more unusual but exciting combination: Champagne. Its fine bubbles and vibrant acidity highlight the fresh flavours of asparagus and seafood beautifully.
If asparagus is served alongside veal or pork schnitzel, Pinot Gris or Chardonnay are excellent choices. These varieties bring both elegance and body, rounding off the dish harmoniously.
White or Green? The Type of Asparagus Matters
The type of asparagus also makes a difference. Green asparagus, which grows above ground, has a more intense and slightly spicier flavour. Here the wine can also be a little more expressive. Silvaner is an excellent all-round partner for green asparagus.
If green asparagus is lightly pan-fried, a Sauvignon Blanc can highlight the dish beautifully.
