Manual harvest followed by gentle pressing. Overnight sedimentation to clarify the juice, then wild-yeast fermentation in new 20% oak barrels. After maturing for 12 months, the wine is lightly fined and then bottled without filtration.
This Pouilly-Fuissé premier cru has a concentrated nose showing ripe citrus, pear, and exotic notes. Fine oak characters marry with hints of butter and broken limestone and flint. Balanced and densely woven on the palate, with a balanced concentration of flavours. Juicy with forward acidity and a clear and precise balance of fruit and oak. Long finish with ripe citrus, brioche and chalky minerality.
Domaine Barraud is an organically farmed estate comprising 11 hectares of vineyard situated between the spectacular Mâconnais limestone escarpments of Solutré and Vergisson, where the soils are a mixture of limestone, clay and flint. Les Crays is situated on the steep southern side of the Roche de Vergisson. The vines are over 60 years of age, with roots that penetrate into limestone scree.
