Meticulous manual harvest, whole bunch pressing, wild-yeast fermentation and a low-intervention approach in the cellar. The wine spends 10 months in stainless steel tanks before being bottled unfiltered and with a minimal addition of sulphur.
This unfiltered Chardonnay has a slightly hazy appearance, showing citrus aromas (preserved lemon; orange) as well as apple, pear, and white blossom. The nose is rounded off by fine hints of almond along with sea breeze, herbs and a touch of smoke. Fresh, linear, precise and driven on the palate, with a salty, mineral structure, vibrant acidity and a long, pure finish. Please give plenty of air and then enjoy over several hours.
Domaine Ratte in Arbois farms according to (Demeter-certified) biodynamic principles, putting nature and terroir first. The Grand Curoulet plot sits on calcareous, marly soil containing fossil deposits. This wine owes its depth and expression to vines aged around 80 years old and to meticulous manual work in the vineyard. The cool Jura climate lends freshness and precision.
