Gentle pressing of hand-picked grapes followed by slow fermentation in stainless steel. Ageing on the lees for 10 months in oval concrete tanks and amphora.
Delicate on the nose, with wonderful citrus aromas, pear, yellow fruit, thyme and a hint of almond. Minerally, full and concentrated on the palate, with racy acidity. Well-structured and elegant.
Grown on a very stony, calcareous soil referred to as caillottes.
