Manual harvest followed by gentle pressing. Overnight sedimentation to clarify the juice, then wild-yeast fermentation in used oak barrels and stainless steel vats. After maturing for ten to 14 months, the wine is lightly fined and then bottled without filtration.
On the nose, this Pouilly-Fuissé shows a reductive hint along with aromas of ripe citrus, pear, and peach. Perfectly integrated oak, framed by fine honey notes and a hint of summer rain on warm stone. Medium-bodied, juicy and full of tension on the palate, with a slightly creamy character. Long finish with ripe citrus and saline minerality.
Domaine Barraud is an organically farmed estate comprising 11 hectares of vineyard situated between the spectacular Mâconnais limestone escarpments of Solutré and Vergisson, where the soils are a mixture of limestone, clay and flint. South-east facing Les Châtaigniers overlooks the village of Fuissé. The vines are around 60 years old.
