Organic
Destemming, but no crushing, of freshly picked grapes immediately after harvest. Vinification in stainless steel, with a short cold maceration ('cold soak') followed by temperature-controlled fermentation. Spontaneous malolactic fermentation and subsequent maturation for 12 months – 50% in stainless steel vats, 30% in French oak tonneaux, and 20% in amphorae.
Pale ruby colour. Red cherry, forest fruit and fine spice on the nose, with hints of clove and mocha. This Valpolicella is very fresh on the palate, with a juicy mouthfeel and soft, velvety tannins. Good balance of fruit and spice, leading to a persistent, elegant finish.
The grapes come from traditional pergola-trained vines in Vendri. These holdings are around 15 years old and sit on very stony, limestone- and humus-rich soils. Currently in the process of converting to organic on its 23 hectares of land (of which 11 hectares are under vine), the winery is trying to encourage a high level of biodiversity on its property, creating natural habitats for flora and fauna. It practises a common-sense, environmentally friendly, sustainable and natural style of farming.
