Manual harvest at the beginning of October. In February, following fermentation in stainless steel, the Valpolicella base wine is added to the still-active pomace of freshly pressed Amarone to kick-start a second fermentation – hence the name Ripasso, meaning 'repassed'. The wine then goes through malolactic fermentation before spending at least 30 months in large 2,000-litre Slavonian oak vessels.
Medium ruby colour. Forest fruit and pronounced cherry notes dominate on the nose along with fine floral characters and a hint of spice. This Valpolicella Ripasso is vibrantly fresh on the palate, with juicy acidity and fine, silky tannins. Good structure and perfectly integrated alcohol lend balance and approachability. The finish is persistent, again with sour cherry and delicate spice.
The grapes come from traditional pergola-trained vines in Parona. These holdings are around 20 years old and sit on calcareous tufa. Currently in the process of converting to organic on its 23 hectares of land (of which 11 hectares are under vine), the winery is trying to encourage a high level of biodiversity on its property, creating natural habitats for flora and fauna. It practises a common-sense, environmentally friendly, sustainable and natural style of farming.
