The grapes were picked very selectively by hand and destemmed immediately in the vineyard. Spontaneous fermentation began with carbonic maceration and was completed after gentle pressing of the fruit into juice. Raised in stainless steel. No fining or filtration. The wine received the bare minimum of sulphur at the time of bottling.
This Trousseau is dense and elegant on the nose, with red berries, wild strawberry, sour cherry, fine spice and hints of forest floor and iron. It has a fresh, structured, elegant palate with fine, rounded tannins, saline minerality and a long, effortless finish. Please give plenty of air and then enjoy over several hours.
Les Corvées – one of the best vineyards in Arbois, sitting 350 metres above sea level – is planted with an old Trousseau clone called 'Trousseau à la Dame'. The soils consist of calcareous marl. The cool Jura climate lends freshness and precision.
