Manual harvest. Full destemming followed by gentle crushing, then wild-yeast fermentation in stainless steel and concrete tanks, with continual punch-downs of the cap. Subsequent maturation at a constant temperature for 18 months in 25- to 80-hectolitre vessels. No fining or filtering.
The nose is a revelation, offering notes of cherry, red berries, earth, truffle, herbs, olive and spice. Powerful on the palate, with good concentration and beautiful balance. Long, persistent finish. Excellent ageing potential.
Tempier's flagship blend marries a variety of terroirs around the estate, with vines aged 35 to 40 years old. The soils consist of clay, limestone, sandy marl, and young colluvial deposits. Different sun and wind exposures also influence the character of the wine.
