Manual harvest followed by vinification in oak as well as stainless steel, with little to no winemaking intervention. Then a long period of maturation on the gross lees. This pure, dry wine is neither fined nor filtered.
Exciting on the nose with aromas of flint, Mediterranean herbs, concentrated ripe fruit such as red apple, lemon and peach. Complex on the palate, with lively acidity, tension and a subtle residual sweetness. Juicy fruit and a long finish. May well remain in the bottle for a few more years and should easily continue to grow for over 15 years!
Alle Reben des Weinguts stehen auf Steillagen und werden biologisch bewirtschaftet. Die Enkircher Lage "Ellergrub" ist extrem steil, der Untergrund besteht aus feinerodiertem blauem Schiefer. Die Reben sind ca. 80 Jahre alt.
