The primary focus during the vinification stage is on the preserving and expressing the purity of the fruit picked in the vineyard. Selective manual harvest followed by slow fermentation based on the wild yeasts that occur naturally in the vineyard – a process that can last more than 10 months. Maturation in traditional Mosel Fuder (oak casks).
Wonderful tension and a compact mouthfeel define this Riesling. Linear and pure, with finesse and bright, crystalline minerality. An elegant, precise white wine imbued with great energy and wonderful inner balance.
Nonnengarten is situated to the right of the Marienburg vineyard, as seen from the Busch family's old manor house in Pünderich. The vines enjoy a south-easterly aspect as well as soils consisting of red weathered slate with varying proportions of loam.
