Selective manual harvest of very ripe fruit, followed by gentle pressing, then wild-yeast fermentation. Aged in stanless steel tanks. No fining or filtration. The wine received the bare minimum of sulphur at the time of bottling. This is a non-oxidative, topped-up style of Savagnin – unlike the ultra-oxidative sous voile approach for which Jura is famous.
Unfiltered with a slightly hazy appearance, this Savagnin has a nose of pear, apple, citrus and grapefruit, complemented by acacia, wax, fine herbs and smoky hints. Dense, full-bodied and structured on the palate. Nutty flavours and lots of drive and tension, with a beautiful counterpoint coming from ripe, balanced acidity. Long finish with a fine bitter note and saline minerality. Please give plenty of air and then enjoy over several hours.
Blue and grey marl with a high limestone content, from plots in Arbois. Naturé is the old name for Jura's signature grape variety Savagnin.
