The grapes are completely destemmed after manual harvesting. During vinification, the must is kept at cool temperatures for around three weeks to enhance a distinctive aromatic profile, and is then fermented.The wine is first aged for five months in stainless steel tanks, followed by 24 months in 20-hectolitre French and Slavonian oak casks. It then undergoes a further 12 months of bottle ageing before being released for sale.
Deep ruby. Wonderful, complex tertiary notes on the nose. Plum, red berries, black pepper, and herbs on the palate. Balanced structure, with ripe berries and fine succulence lending beautiful balance and length.
Sourced from the Le Macie, Le Giordane and I Crachi single-vineyard sites situated 100 to 350 metres above sea level, where the soils are mainly composed of limestone and clay marl.
