Selective manual harvest of ripe grapes only. Gentle pressing followed by wild-yeast fermentation in stainless steel. Maturation for six to seven months on the fine lees for a pleasant texture and creaminess. No filtering or fining.
Fresh apricot, peach and citrus, accompanied by slightly exotic notes. Wonderfully lush, with delicate acidity and saline minerality. One of Van Volxem's most quintessential bottlings.
Steep slopes with high proportions of ungrafted vines that were planted over 30 years ago on Devonian slate and greywacke.
