Selective manual harvest of immaculate grapes. Gentle pressing followed by a slow wild-yeast fermentation in temperature-controlled stainless steel (i.e. based on the natural, indigenous yeasts present on the grapes). Maturation on the fine lees until just before bottling, to add character and body.
An approachable Riesling showing flint, yellow fruit, exotic hints, citrus, green apple and wild herbs on the nose. The palate is lean, pure and linear, with wonderful tension, precision and drive. A long, saline finish underscores this direct style.
The relatively elevated position of the Steinacker vineyard and the presence of a massive seam of limestone underneath ensure long hang time to produce in Rieslings of great finesse.
