Manually harvested and destemmed grapes were macerated on their skins for ten days in stainless steel before being fermented with natural yeasts. This red wine then spent nine months in used 500-litre barrels.
The 2023 Salvajes Cadalso has a lovely, delicate nose of sweet forest fruit alongside floral hints and fine herbal notes. Very pure, fresh and subtle on the palate, with acidity and ripe tannins in harmonious balance. Spice and floral characters on an elegant, persistent finish. Production is limited to only 1,800 bottles.
