Manual harvest involving several passes through the vineyard. Maceration (skin contact) for 12 hours followed by wild-yeast fermentation in stainless steel.
Dry, lean attack, with beautiful salinity, yellow fruit, herbs, tremendous grip, an expressive mouthfeel and notable minerality.
The grapes for this village-level bottling came from the Westhofener Kirchspiel vineyard. The terroir consists of heavy clay marl interspersed with limestone. Water-bearing veins of limestone help to keep the vines hydrated even in the hottest conditions.
