Selectively picked grapes. Cold maceration ('cold soak') lasting anything from 12 hours to three days, followed by gentle pressing. Subsequent wild-yeast fermentation in old oak casks and partially in temperature-controlled stainless steel. Maturation on the lees for body and complexity, then bottling in May.
Blackberries, white and small red fruits, and stony and floral hints. Vibrant, spicy and juicy, with lovely tension and elegant length.
The grapes come from the three grand cru vineyards of Hipping, Pettenthal and Rothenberg. The ‘Red Slope’ vineyard has a solid red clay slate soil with a very thin layer of weathered soil.
