Organic
Selectively picked grapes. Cold maceration ('cold soak') lasting anything from 12 hours to three days, followed by gentle pressing. Subsequent wild-yeast fermentation in old oak casks. Maturation on the lees for body and complexity, then bottling in May.
Yellow stone fruit, citrus fruit and tropical fruit aromas on the nose, accompanied by fine notes of basil. This Riesling is ripe and juicy on the palate, carried by vibrant acidity that lends tension and balance. Salty mineral notes emerge, culminating in a long, spicy, yellow-fruit finish.
The grapes come from the three grand cru vineyards of Hipping, Pettenthal and Rothenberg. The ‘Red Slope’ vineyard has a solid red clay slate soil with a very thin layer of weathered soil.
