Manual harvest into small crates. Partial destemming followed by gentle pressing to obtain the desired colour intensity. The juice was cooled for around two days and fermented with wild yeasts in 300-litre amphorae, where it remained for the duration. No fining or filtering.
Sweet strawberry, cherry, blackcurrant, honeydew melon, candied orange and peach on the nose, with a hint of crushed stones. Medium-bodied on the palate, with energy and freshness that lead in to a complex finish.
Up to 40% clay, with calcareous stones and a high sodium content.
