Manual harvest followed by gentle pressing. Wild-yeast fermentation, with the wine subsequently spending time in a 1,000- or 500-litre cask. No chemical additions. Each separate bottling is made from a single cask.
This dry Spätlese has a beautiful nose with lovely fresh aromas of ripe quince, apple, peach, wet slate, herbs and pine needles. The palate is dry with crisp, firm acidity and an assertive, silky finish showing a slightly smoky, saline minerality.
The Weber family farms 13 hectares in a tributary valley of the Saar called 'Konzer Tälchen', which means 'the little valley of Konz'. Most of the vineyards have a southerly aspect and iron-rich, grey-slate soils.
