Manual harvest followed by gentle pressing. Wild-yeast fermentation, with the wine subsequently spending time in a 1,000- or 500-litre cask. No chemical additions. Each separate bottling is made from a single cask.
'Palm' is the name of the Fuder (or cask). This off-dry Riesling Spätlese shows lime blossom, sweet pear, lime and grapefruit on the nose. The extremely mineral attack on the palate is complemented by a pleasant touch of sweetness. Fresh notes of pear and lime are juxtaposed with saline minerality on a long-lasting finish.
The Weber family farms 13 hectares in a tributary valley of the Saar called 'Konzer Tälchen', which means 'the little valley of Konz'. Most of the vineyards have a southerly aspect and iron-rich, grey-slate soils.
