Only the ripest and best grapes from several selection rounds are used for the Chardonnay Crue. Fermentation and maturation then take place without further intervention on the fine lees in used tonneaux and barriques from Saint Romain (Burgundy).
This Chardonnay shows wonderful Burgundian characteristics with aromas of lemon, grapefruit, red apple and Williams pear. These are accompanied by almonds and hazelnuts, as well as a hint of yeast and delicate toasted aromas from the wood ageing. Full-bodied on the palate, with great concentration and a creamy texture. The finish is very long with a slightly salty, chalky minerality.
Rare Chardonnay clones from cult Burgundy producer Coche-Dury, grown exclusively on limestone in three small plots that belong to the estate.
