Selective manual harvest. Fermentation including malolactic, and subsequent maturation, for around 15 months exclusively in third- and tenth-use oak barrels.
This Chablis grand cru opens up with air to reveal aromas of yellow fruit, beeswax, buttery pastry and wet stone. The palate is full-bodied and complex but balanced, with notes of yellow peach, apricot and roasted hazelnut, rounded off by a beautiful lick of salinity and a long, elegant finish.
Grand cru Les Clos is one of the most prestigious vineyards in Chablis. The estate's holdings here total 0.88 hectares of limestone and clayey marl Kimmeridgian terroir, where the vines enjoy a south-south-westerly aspect and have an average age of 32 years.
