How sparkling wine is made

The production of sparkling wine begins with fermenting a base wine, which then undergoes a second fermentation. This step creates the carbon dioxide responsible for the wine’s fine bubbles. The second fermentation can take place either in the bottle (traditional method) or in a tank (Charmat method). The choice of method, as well as the duration of lees ageing, significantly shapes the character of the sparkling wine.

With the traditional method, the wine ages on the lees for several months to several years, developing notes of brioche, nuts and pastry, and gaining a particularly creamy mousse. Petillant Naturel (Pet Nat), on the other hand, ferments spontaneously in the bottle and is usually left unfiltered, giving it a lively and unpolished character.
Sparkling wines made using the Charmat method remain especially fruit-driven and fresh.

Dosage – the finishing touch in sparkling wine

After the second fermentation and lees ageing, the yeast sediment is removed during disgorgement, followed by the addition of the dosage (a mix of wine and sugar). The dosage determines the sweetness level: brut nature (no added sugar), extra brut, brut, extra dry, sec or demi-sec. It rounds out the acidity and gives the sparkling wine its final balance.

More and more producers choose minimal or no dosage, creating pure, dry styles with pronounced freshness and minerality.
