Manual harvest followed by gentle pressing. Wild-yeast fermentation, with the wine subsequently spending time in a 1,000- or 500-litre cask. No chemical additions. Each separate bottling is made from a single cask.
An aromatic and incredibly complex Riesling Kabinett with a slightly reductive nose of citrus (mandarin and orange), complemented by a generous helping of herbs (sage and rosemary), and wet stone. Fascinating interplay of sweetness and acidity on the palate, with fresh notes of citrus and dry herbs. Long-lasting finish with hint of creaminess.
The Weber family farms 13 hectares in a tributary valley of the Saar called 'Konzer Tälchen', which means 'the little valley of Konz'. Most of the vineyards have a southerly aspect and iron-rich, grey-slate soils.
