Hand-picked and hand-selected grapes (maximum yield of 40 hectolitres per hectare). Gentle pressing followed by slow wild-yeast fermentation for several weeks in temperature-controlled stainless steel. Subsequent maturation on the lees until just before bottling, to add complexity and body.
Pleasant and inviting on the nose. Subtle on the palate, with beautiful depth, a pleasant mouthfeel, good structure, a hint of salinity and yellow fruit notes. A real charmer.
Sourced from vines that were planted over 35 years ago on limestone-rich soils interspersed with gravel and iron oxide.
