Native Giró Ros grapes, harvested by hand with further careful sorting. Cold settling of the juice for three days followed by transfer to 500-litre vessels. Fermentation at a temperature of 20 to 21°C. Regular bâtonnage (stirring of the fine lees) from January onwards. Maturation for five to seven months, with approximately 75% of the wine resting in used 500-litre French oak casks and the other 25% spending time in stainless steel.
This Mallorcan white wine has a slightly reductive nose offering citrus, pineapple, mango, chalk, sea breeze and fine oak. The palate is complex, finely structured and fresh, with beautifully integrated oak. Medium body, with 12.5% abv and a persistent finish lifted by a fine, saline notes. Only 5,500 bottles were produced.
Grown from two small plots (0.61 ha and 0.55 ha, respectively), on red, calcareous, iron-rich clay soils known as Call Vermell. Sustainable, respectful, minimal-intervention farming. Giró Ros is a native Mallorcan grape variety that was rediscovered at the beginning of the 21st century.
