Das sorgfältig von Hand gelesene Traubengut wird in offenen Barriques während drei Wochen spontan mit wilder Hefe auf der Maische vergoren. Anschliessend wird die Maische schonend gepresst und der Wein im Stahltank fertig ausgebaut. Dieser Naturwein ist unfiltriert, ohne Zusätze und vollständig ungeschwefelt.
Since 2002, Michael Broger has been growing wine from the 2.5 hectares of vines that he owns and leases above the hamlet of Boltshausen. To preserve his vineyard soils, he works these steep slopes by hand and via the use of manually operated caterpillar-track machinery. Broger is fully committed to the principles of biodynamic viticulture.
