Manual harvest. Destemming followed by traditional wild-yeast fermentation in stainless steel as well as concrete. Subsequent gentle pressing and transfer into large oak vessels, with maturation (including malolactic fermentation) for a further 18 to 20 months. No fining or filtering.
The 2023 Cabassaou single-vineyard blend shows remarkable intensity, with notes of ripe raspberry, blackberry, tree bark, truffle, and leather. Full-bodied and concentrated on the palate, with immaculate, ripe tannins and precise acidity – this benchmark Bandol is a complex, long-lived wine that can easily be cellared for two decades.
Cabassaou is a small, south-west-facing, 1.5-hectare vineyard that enjoys optimum sunlight exposure, with vines aged around 60 years old. This terroir, lined with small stone walls, consists of calcareous loam, sandstone and marl. Situated near the bottom of the hill below its neighbour La Tourtine, Cabassaou is protected from the northerly mistral winds. Despite the site's lower location, the soil is not deep and the yields are very low. The vines benefit from a very warm microclimate and prevailing thermals.
