Hand-picked and hand-selected grapes. Whole-cluster cold maceration (no destemming) followed by fermentation in ancient Gallo-Roman vats. Gentle pressing then maturation for 12 months – 20% in first-use and 80% in used oak barrels (second- to fourth-use). No filtering.
Deep ruby colour. The nose shows dried strawberry, violet, blackberry and blackcurrant, followed by pepper and lebkuchen spice. A complex red wine with a balanced full body, ripe tannins and a long, slightly saline finish.
The sandy soils of the Hominis Fides lieu-dit are very calcareous, interspersed with loam.
