Manual harvest. Full destemming followed by gentle crushing, then wild-yeast fermentation in stainless steel and concrete tanks, with continual punch-downs of the cap. Subsequent maturation at a constant temperature for 18 months in 25- to 80-hectolitre vessels. No fining or filtering.
Dark red with violet reflections. Wonderfully aromatic tones, with succulent dark fruit and balsamic nuances of cedar, spice and spring blossom. Expressive entry on the palate, then the structure fills out, underscored by ultra-fine tannins. This wine is perfectly balanced thanks to its natural freshness, with good length on the finish.
Sourced from various vineyards, where the soils consist of sand, silt and clay. The resultant wine is well balanced and a perfect reflection of its terroir.
