Low average yields. Selective manual harvest involving up to three passes through the vineyard. Wild-yeast fermentation in large 2,000-, 3,000- and 4,000-litre oak casks as well as in stainless steel vats. Then gentle pressing. Eleven months on the fine lees for added complexity and creaminess. No filtering or fining.
Complex on the nose, showing citrus, quince, apple and slightly exotic notes, complemented by minerality (wet stone and chalk) and delicate floral and herbal characters. Extremely delicate on the palate, with remarkable juiciness and concentrated saline minerality.
Scharzhofberger Pergentsknopp P is sourced from the estate's best plot in the famed Wiltinger Scharzhofberg vineyard, where the vines grow on some of the finest mineral-rich, blue weathered Devonian slate soils.
