Selective manual harvest of ripe grapes only. Gentle pressing followed by wild-yeast fermentation in stainless steel. Maturation for six to seven months on the fine lees. No filtering or fining.
Nose of citrus and apricot, combined with spicy hints. The palate is both bright and intense, with wonderful salinity and a lot of zip.
