Made from meticulously hand-picked Chardonnay fruit. Primary fermentation in used wood, followed by traditional bottle fermentation with 25 months of ageing on the lees.
This blanc de blancs has a pleasantly fresh nose of ripe apple, pear, almond, brioche and toasted white bread. The palate has a fine mousse, with subtle notes of white blossom and delicate yeasty characters on a long finish.
Rare Chardonnay clones from the Champagne region, grown exclusively on limestone in three small plots that belong to the estate.
