Special characteristic

Manual harvest into small crates. Partial destemming followed by gentle pressing to obtain the desired colour intensity. The juice was cooled for around two days and fermented with wild yeasts in 300-litre amphorae, where it remained for the duration. No fining or filtering.

Cherry, blackcurrant and grapefruit on the nose. Powerful and full-bodied on the palate, with minerality and perfect balance.

Up to 40% clay, with calcareous stones and a high sodium content.
