Following a meticulous manual harvest, each parcel is vinified separately in open-top fermenters. The wine then spends up to 18 months in 300-litre French oak barrels (30% first-use).
Aromas of violet, black fruit, spice, and cedar, complemented by subtle notes of wet earth, and olives. This Shiraz is juicy and full-bodied on the palate, with velvety tannins and a long, intense finish.
The fruit came from the best plots in the Bethany and Stonewell vineyards, where the terroir predominantly consists of sandy clay loam with a brown-reddish clay topsoil. Some of the grapes come from the oldest Shiraz vines in the world, dating back to 1847!
