Grapes from old vines – hand-picked in the vineyard with further sorting at the winery. Destemming of two thirds of the fruit followed by pressing without the addition of sulphur. Wild-yeast fermentation in used oak barrels and concrete tanks, where the wine remains for 12 months.
This Costières de Nîmes has a lovely nose bursting with cherry fruit and ripe berries, alongside garrigue herbs, pepper and dark chocolate. The palate is pleasantly full-bodied and already very approachable, with ripe, soft tannins. The finish is long and has a fascinating array of flavours.
