Hand-picked from a single plot, with white grapes accounting for around 40% of this field blend. Destemming limited to 75% of the fruit. Wild-yeast fermentation in an open-top oak fermenter. It matured in a used 500-liter casks for about 12 months and a few months in concrete eggs.
Intense, pure nose with red berries, red cherry, herbal notes and Mediterranean spice. Juicy and fresh on the palate, with lots of red fruit, a dense body and a long, thrilling finish.
From a centenarian south-facing vineyard with sandstone soils in Fonzaleche. This is a field blend of white and red grapes harvested and vinified together.
