Hand-picked field blend, of which whole bunches make up around 25%. The juice is left to ferment naturally before being left well alone for around 14 months in two 500-litre vessels. Minimal addition of sulphur.
Fascinating nose of cherry, violet, Seville orange, pepper and chocolate. Stimulating palate, with fine tannins producing a silky mouthfeel. The finish is long, with notes of tobacco, pepper and raspberry.
Sourced from vines planted over 100 years ago in the diminutive 0.45-hectare Bahierra vineyard in Fonzaleche.
