The grapes are harvested by hand and then left to dry for around 90 days in a 'fruttaio' (a well-ventilated drying room). After a 15-day cold maceration ('cold soak'), the wine ferments slowly in stainless steel before spending at least 48 months in large 2,000-litre Slavonian oak vessels and a further six months in bottle before release.

Deep ruby colour. Nose of ripe cherry and forest fruit along with elegant notes of spice, herbs, tobacco, leather and liquorice. This Amarone is powerful and full-bodied but remarkably fresh, with velvety tannins. The fruity and savoury characters continue on the palate, accompanied by a fine lick of salt. Long and powerful on the finish, with great harmony and depth.

The grapes come from traditional pergola-trained vines in Vendri and Parona. These holdings are around 40 years old and sit on calcareous tufa. Currently in the process of converting to organic on its 23 hectares of land (of which 11 hectares are under vine), the winery is trying to encourage a high level of biodiversity on its property, creating natural habitats for flora and fauna. It practises a common-sense, environmentally friendly, sustainable and natural style of farming.
