Hand-picked and hand-selected grapes. Gentle pressing followed by fermentation mostly in temperature-controlled stainless steel. Wild-yeast fermentation of a small batch of fruit in a large oak cask. Subsequent maturation on the fine lees through the winter until bottling in the spring.

Pale lemon. Lovely nose of ripe white pome fruit, fresh herbs, and minerals. Wonderful purity and precision on the palate. Pleasantly fresh, juicy and stimulating.

The fruit for this bottling is mainly sourced from slate and granite soils in the Halenberg vineyard.
