The grapes are hand-harvested and carefully sorted. After total destemming, the must undergoes a 12-hour cold skin contact. This is followed by a five-day cold stabulation at 8 °C with regular stirring. Part of the must is racked and fermented in concrete vats at 18 °C. Around 15% of the wine undergoes malolactic fermentation. Ageing takes place on fine lees with regular bâtonnage until Christmas. Fining, filtration, and bottling take place in March.
Pale lemon with golden reflections. Notes of ripe fruit, with apricot, peach and candied citrus. Aromatic, balanced and soft, with beautifully integrated acidity. Long and fruit-inflected on the finish.
Calcareous loam.
