César Márquez’s flagship Godello undergoes wild-yeast fermentation in a 500-litre barrel before maturing on the fine lees for 11 months. No bâtonnage (lees stirring). Bottled without filtration.
Intense nose of citrus and fresh herbs. Slightly smoky with notes of freshly baked bread and cool, stony minerality. Ultra-fine on the palate, with great tension, more citrus, ginger and a line of chalky, salty minerality. Long, complex finish.
El Val comes from one of coolest sites in Valtuille. The vines, which were regrafted onto old Godello clones, sit on clay, stone and quartzite soils.
