Selective manual harvest at the beginning of October. Fermentation at relatively cool temperatures of between 28 and 30°C. Subsequent maturation, including malolactic fermentation, for 14 months in barriques and large oak casks, with an additional month spent in stainless steel before bottling. Only 4.000 bottles were produced.
Deep ruby. Beautiful aromatic complexity on the nose, with wild flowers, red berries, and spice. Balance and structure on the palate. The tannins are firm yet wonderfully elegant and balanced. This exceptional wine has a long finish.
Sourced from a 0.8 ha vineyard outside the town of Randazzo, with stony and very fertile volcanic soil comprising a top layer of volcanic ash. The vines – all ungrafted – grow in the contrade Calderara at an altitude of 620 metres above level and are gobelet-trained.
