The 2018 Pisoni Estate Chardonnay was in barrel for 18 months (50% New oak). This is a small production chardonnay with 1080 bottles total, from three clones at Pisoni Vineyards. It is sourced from very rocky (granite) soils. Yields are low and fermentation is done with 100% native yeast which brings a very slow and complex fermentation. This often takes 4 to 5 months to ferment. Wine then rests in barrel with very little stirring. Bottling is done with no fining or filtration.
