Short maceration ('skin contact') followed by gentle pressing of hand-picked grapes. Cultured-yeast fermentation in stainless steel. Three-month maturation on the fine lees, then filtering and bottling in May.

Medium lemon with green reflections. Fragrant nose of pome fruit and intense spice. Elegant mouthfeel with forward fruit and spritzy acidity.

Sourced from the Birthal vineyard, where the vines sit on the sandbanks of what used to be a sea. The lightness of the soil lends the wine a certain fragility.
