Selective manual harvest at the beginning of October. Fermentation at relatively cool temperatures of between 28 and 30°C. Subsequent maturation, including malolactic fermentation, for 16 to 18 months in large French oak casks, with an additional month spent in stainless steel before bottling.

Elegant and bright on the nose, with citrus, spice and minerality. Silky palate showing grip, finesse and complexity.

Sourced from a four-hectare vineyard in the San Lorenzo district of Randazzo. Planted over 70 years ago, the vines sit 750 metres above sea level on virtually pure volcanic sand. The estimated yield amounts to around 60 hectolitres per litre. Lava flows and volcaniclastic deposits shaped the terroir of Contrada San Lorenzo.
