Very selective manual harvest of Chasselas grapes. Crushing and pneumatic pressing followed by overnight settling of the juice. Subsequent fermentation, including malolactic fermentation, in large oak casks. Maturation on the fine lees for five to six months, with regular bâtonnage (lees stirring).

Medium straw-yellow. Green apple, salty caramel and subtle roasted aromas on the nose. Assertive entry on the palate. Full-bodied and precise with well-integrated acidity.

The vertiginous terraced vineyards overlooking this part of Lake Geneva are formed of moraine deposits with varied properties. Soils here are generally lighter than those further west in the La Côte appellation situated between Lausanne and Geneva. Gravelly clay deposits dominate the terroir in and around Saint-Saphorin.
