Fermentation and subsequent time on the lees in stainless steel until February of the following year.

Pale lemon with green reflections. Pineapple, elderberry, gooseberry and honey on the nose. Minerally, fresh and balanced on the palate, with a wonderful silky texture and fresh acidity.

This is an intense white wine made from vines aged between 10 and 25 years. This terroir here consists of limestone gravel with a south-easterly aspect.
